BBQ Beef Brisket – Cut from the breast, upper chest. In its raw form it is one of the toughest cuts of meat on the animal. So we smoke the Brisket in our pit for up to 16 hours until it gives up. When finished you can just look at it and it will fall apart. A true Texas staple.
